Kinunot Recipe

Kinunot is a Bicolano delicacy usually made of Manta Ray (pagi) or Shark (pating) with Malunggay, Coconut Milk and Sili. Believe me, this dish is just soooo YUMMY if you know how to prepare it right.

  • 1/2 kilo Manta Ray or Shark
  • 3 cups Malunggay Leaves
  • 1 cup Coconut Cream (pure)
  • 2 cups Coconut Milk 
  • 10 pcs kalamansi or 1/4 cup vinegar
  • 2 pcs siling haba (chopped)
  • 2 pcs siling labuyo
  • salt and pepper to taste
  • 3 cloves crushed garlic
  • 1 onion chopped
  • ginger sliced
  • 2 tbsp cooking oil

  • Boil the manta ray or shark until tender. Let it cool.
  • Flake the fish from its bones and set aside
  • Saute garlic, ginger and onion in a hot pan
  • Throw in the flaked fish together with the lemon or vinegar
  • Add the 2 cups coconut milk and let it boil stirring constantly.
  • Add the chilis and malunggay and let it simmer until the vegetables are half cooked
  • Finally, add the pure coconut cream, season with salt and pepper.
  • Serve with hot rice
  • Burrrpppp!
